Our Classes:

We offer several types of training at our school. Our first class is a four day course. This is a hands-on professional course that we teach weekly. This is for people who want to learn how to make pizza and master the skills involved. It is a very comprehensive course with hands on training and a great consulting atmosphere.


4 Day Class

Our students learn all the fundamentals of dough making daily. We have comprehensive work books that allow the student to grasp the basics and truly learn how to make great products. These fundamentals will allow you to master the art of dough making without the mysteries involved and truly know your business when it comes to dough. These fundamental are explained and demonstrated every day. Our student makes the dough from our standard recipe from start to finish daily. The student roles the dough, ensures the quality of the dough, and understands all the principles regarding making perfect dough. This is the foundation for any pizza master! The student also is taught how to open the dough and make various sizes of pizza. Our students will work at opening and stretching dough through the day, as well as making breads. The training is one on one with a Master Trainer who ensures the student is doing a good job, while building confidence and ability by repetitive training. Also having fun and enjoying the art.

Our students learn how to operate a wood fired oven and practices these skills every day. All the basic fundamentals are explained and the student cooks dozens of pizzas daily. We also cover sauce making and pizza toppings as part of the four day training course. This can include calzones, rolls and brick ovens bread.


By the end of the four day class you will know the secrets and know how to make to make some of the best pizza!


This is a very intense training program provided in a real restaurant atmosphere. The students leave with complete knowledge of how to make dough, sauce and incredible pizza. Its this understanding of all the basic principles that allows you to always make perfect gourmet pizza thereafter.

In addition to our basic class we off a more advanced class that incorporates our 4 day class skills along with operational management training and custom pizza menu development. This class deals with food cost, par sheets, inventory control, waste control quality control and training. It also provides the student with gourmet sauce training in our kitchen for specialty pizza development. This course allows a person to grasp all the fundamentals of the operation side business and gives the student an excellent start in the management aspect of pizza operations. At course graduation the student will be a pizza master and be able to train others in his own shop on all the basics. He will also have developed his own custom pizza menu with ten gourmet pizzas and be able to show case and sell these items. This is the industry's best consulting program. You will leave here know how to make any pizza understand all ingredients and be a master. The training is very intense by the end of the training you will be working the stations by yourself on a busy night. We also offer all our advice on anything and provide follow up support via phone for all your questions.

THE MASTER CLASS

 

This class is for those who want to learn from the best, and succeed in the pizza business! No experience needed ,just passion for the art, and a willingness to learn and work hard!

This class is one of our most intense classes that we offer. It is completely hands-on in every way. We will teach you all we know about pizza and make a master pizza maker out of you. Not only does the class cover all the arts of pizza making ,but is specifically tailored to the students' needs and wants. In other words, we help you develop your own custom menu with all the recipes and standard practices. Our approach is one on one training in a live restaurant environment. It's all about doing it and getting it right.

Our students learn all the fundamentals of dough making daily. We have comprehensive work books that allow our students to grasp the basics and truly learn how to make great products. These fundamental are explained and demonstrated every day. Our students make the dough from our standard recipe from start to finish. The student roles the dough ,ensures the quality of the dough, and understands all the principles regarding making perfect dough and flour types. This is the basic fundamental of pizza. When the student understands and masters these skills he will never have to worry about perfect dough making again!

Our students are also taught how to open the dough and make various sizes of pizza. The student will work at opening and stretching dough through the day. We also teach our students how to make incredible brick oven breads from the same dough recipe . The training is one on one with a master trainer who ensures the student is doing a good job, while building confidence and ability by repetitive training. Basically every day you make all the dough and manage the whole system. This will be done consecutively for six days while learning all the other skills and recipes.

You will make a thousand dough balls. And Fresh bread daily, some of the best bread you ever had! After day one you will make all the dough and breads without instruction.

Gourmet Sauce preparation: We will teach and review all the sauce making procedures for standard pizza and gourmet sauces. These sauces such as Vodka sauce, Porcini sauces, Cheese sauces, Seafood and tomato based sauces will allow you to make incredible products for your restaurant . All recipes and techniques will be practiced and mastered. Recipes will be provided. You will open all cans, prepare all ingredients mix and qualify all sauces. You will cook and taste sauces daily, some of the best sauces you will ever have! These sauces and cooking techniques will allow you to create some of the greatest gourmet pizzas including our International World Best Winners and will give you the foundation for creative culinary expertise.

Pizza Toppings: How to prepare, store and portion all pizza toppings. You will own it!

Pizza styles covered: New York, Old World- Brick Oven, Grandma (thin crispy square), specialty pies, dessert pizzas and toppings, world's best pizza winners as well. Whatever you want we will teach you and you will master it!

Wood fired oven skills: Our students also learn how to operate a wood fired oven and practices these skills every day. All the basic fundamentals are explained and the student cooks dozens of pies daily. We now have one of the best ovens in the world I can't say enough about it and it will be a surprise to you! I have been building ovens for twenty years and used every kind of oven.

Operational management training and custom pizza menu development. This part of our class deals with, par sheets, inventory control, waste control quality control and training. This part of our course allows a person to grasp all the fundamentals of the operation side of the business. This gives you great grounding on what should be done daily. Our students receive Recipe books and standards; Step by step photos and training for six days daily, classes are from 10:00 to 5:00 and longer as your training progress.

You will cook live during our dinner rushes as you progress!
